The 2008 Vintage Chardonnay was one of the most popular Rosnay wines. Having sold out of the 2008 vintage, we now release the 2009, in which we have done our utmost to replicate the great 2008 vintage. As in 2008, we picked the grapes very early, at just 8 beaume, because we wanted a higher degree of natural acidity, which is the key to elegant, light and refined sparkling wine. We back blended a small percentage of table chardonnay for extra fruit, and sent this sparkling base to one of Australia's leading ACO-certified sparkling wine specialists, for the second fermentation. There it was given the "dosage" of sugar for pressurised fermentation and bottling under a high quality DIAM cork. Compared witht he 2008 vintage this wine has slightly higher natural acidity which is balanced by slightly higher sweetness, but it is well balanced. We expect it to improve substantially with some more time in the bottle, as the flavours integrate and the CO2 dissolves further into the wine. |
